Choice, huh?
Choice is holding the brisket level. The less it sags. The more fat. Chilled fat is pretty stiff. Lean red meat is limp.

(I've bought three Benchmade knives that were on sale. They gave gift cards. Man, walk that S out to the car and go back inside) 'Limit 2' is a sales pitch. Limit 2? It must be popular. Maybe I need to be waiting at the door when they open? Limit 2. It's quite brilliant if you think about it.
