They did use cheez whiz in a gallon pail when I went to Pats in South Philly in 1972. I looked and they now say they have other options.

Okay do you do the meat , onions and peppers separately then mix together add cheese and throw on a hoagie ? Hoagie toasted ?

Whiz or provolone are acceptable. I prefer provolone. Buffalo chicken cheesesteak is excellent, too.

I like to have my onions and peppers already cooked and sitting on side of flat top. Throw the meat down chop thru it about 3 quick time add 2 slices of Munster cheese add onions and peppers till cheese is melted thru. Slap it on that toasted hoagie and enjoy HEAVEN
