Heading to Amistad on Friday for a 4 day trip with a group of 9. Since I am currently unemployed I have been elected to plan the menu and do the shopping, and I am stuck. I am also head cook which is no problem as I do enjoy working a grill, but I can't come up with any original ideas. Anybody got any good standby's besides the usual burgers, dogs, or steaks that is somewhat quick and easy? I usually pull out of the water about a half hour before sunset ( I know, Im giving up the best fishing time, but I usually have more than limited out by then anyway)in order to have the grub ready for the rest of the crew when they pull in. Any ideas would be most appreciated.
Probably the saddest thing you will ever see is a mosquito sucking on a mummy, Forget it little friend!! :-(

This is wonderful, cheap, and you will be a hero recipe - figure two pieces per person.
boneless, skinless chicken thighs bacon basil leaves feta cheese Lawry's liquid smoke.
wrap a wedge of feta cheese, a basil leaf or two, a few drops of liquid smoke, and a dash or two of seasoned salt in a chicken thigh, then wrap with a slice of bacon. Toothpick it closed and grill for 45 minutes. You will not believe how tasty this is!
You can also add a slice of jalapeno pepper to the wrap. Similar to the way you do dove breasts.

GS---that sound good---Would it work with wrapping it in foil and cooking it that way as well???

Rich - I guess you can do that but the bacon would not get crisp and I like mine slightly crispy. Maybe leave off the bacon - let me know how it turns out if you try it.

Bring a crock pot and put a pork or beef roast with carrots, taters, onions and some beef or chicken broth on about noon, when you return dinner is ready.

You might try buying Bush's baked beans (but camp might smell that night..LOL) and add in the following per large can- A dash or two of Worcestershire 2 tablespoons of A-1 sauce 4 tablespoons of KC masterpiece 1/4 Kielbasa sausage
Add the liquid ingredients into the beans and get them simmering. Brown the Kielbasa. Slice into 1/4 inch slices and add to beans. Simmer until the excess liquid starts to cook down. Serve with a loaf of French bread and enjoy some great and easy to make camp food.
If you want to zip it up a bit more add in some sauted onions and or bell peppers.

I would go with the beef roast in a crock pot idea. You can throw it together in about 15 minutes, turn it on before you head to the water in the morning and it's ready to serve when you get back. It will serve enough folks and it's the full meal, other than a green vegetable or salad on the side (I would go with fried okra on the side). If you want a simple and easy beef roast, just toss the orast in the crock pot, add carrots, potatoes (I cut them in 1/2 or 1/4 depending on the size), a little onion and put 2 cups of water. Then for flavoring, add a package of Dried Lipton Onion Soup mix on top. It's easy enough and tastes great. Of course, you will want to take some of the liquid (juice) out once you're finished and make a nice brown gravy.

Fajitas. If done right, they only take about two minutes on the grill.
