How long are you guys smoking your ribs for?
I think I learned the 321 method on here and I have done that and they turned out ok, bt seem to be lacking from some of the others I have tried.

I don't ever wrap. spritz every hour till their done. the meat will pull back from the bones and they will bend easily when lifted in the middle.

I started these at 215, then dropped them down to 185 to slow things down. i usually go 225 and they take 5 or 6 hours. Those look really good, what rub did you use?

Cook to temp. 275. Takes arounnd 4 hours on average I wrap during comps but not in the backyard

3, 3, 2 method always works.
3 hours meat side up. 3 hours wrapped and 2 hours unwrapped with sauce.
Life journey is not to arrive at the grave safely in a well preserved state. But rather skid in sideways, totally worn out, shouting "holy carp what a ride!"

I do 3-2-1 with St. Louis style and 2-2-1 with baby back but only as a reference/ guidelines me. They are done when they are done.

Great guidance in this thread. There is no 1 best way to cook them. Do what’s best for your taste and tenderness. The fun and reward is in the experimenting a bit to bump them up a level.
Keep looking forward. That’s why windshields are larger than rear view mirrors.

I tried 3-2-1 but after the third day they were pretty black and dried up.
