The steam engine was a big one as well. Not much you can't do with steam if you put your mind to it. The Panama Canal was dug with steam shovels.

Didn't read the whole thread but I'll go with defying the all-knowing and all-powerful Church and saying that the Earth and other planets revolved around the sun rather than them all revolving around the Earth.
It really helped solidify a lot of ideas and theories that had been around a long time prior.
