help with Prop education - suggestions

I have a 2014 24' tri-toon, with a 200 SHO Yamaha. The original owner used it to water ski, and had the motor propped that way when he ordered it.
Boat runs great, has a strong hole shot. I do pull kids on tubes a little, but most of my use is fishing and or just riding my wife around and letting her enjoy the lake... more me using it to fish! No sking.
I think the boat has too much of a holeshot prop, but I am not sure? It rev's to about 5500 on top, if I trim it out a lot. I try to stay below 5000 just for better life. In the winter with colder water and air, 32-33 mph by gps unit. Summer 28-30 mph. But, over about 5000 I really don't pick up any speed, just rpm. Also, top of throttle really does not increase anything (last 1/2" of movement). Reading some pontoon/tri-toon forums, similar boats, they are seeing some - to a lot more mph.
I am on Cedar Creek - big long lake, and live on the north end. Like to fish south end at times. Would love a little more mph on calm days.
I understand the numbers on the prop, but not sure what range and size should be on what, or what will help me.
Current prop - Yamaha "Reliance Series" - stainless 19-M 13 3/4
Tell me what you think - am I worrying about something I need to leave alone, etc.? If I change the prop, what increase should I see?

#1 rule for prop selection. Get the prop that runs at the top of your RPM range. Your max rpms should be at 6,000.
Advice? Call Josh at Steves prop on fork. He can work with you and get better results than a blind internet guess.
I’ve setup a lot of tritoons and had really good results with the powertech 4 blade offshore design. The challenge with pontoons is running in less than calm water.
