Lots of great ideas in here. The boiled egg in the middle looks tantalizing! Wash your sister sauce....

My mother never used ketchup for the glaze on her meatloaf. Always used picante sauce instead and it was darn good!

It sounds like you have all the ingredients for a delicious and flavorful meatloaf recipe! Using lean ground beef and incorporating fresh bell peppers, poblano peppers, yellow onion, and garlic cloves will definitely add a lot of depth and complexity to the dish. You can create a meatloaf mixture by combining the ground beef with some breadcrumbs, an egg, and your desired seasonings (such as salt, pepper, paprika, and Worcestershire sauce) before shaping it into a loaf and baking it in the oven. Feel free to experiment with the ratios and flavors until you find the perfect meatloaf recipe for your taste. Happy cooking!

There's not a darn thing wrong with catchup in or on meatloaf. I cover mine with tomato paste about a quarter of an inch thick like icing on a cake. You can always kick it up a notch by using Heinz chili sauce instead of catchup on or in anything. Its very good, try it!

Same. Jesus wouldn’t eat meatloaf without ketchup on it. Had to be Heinz too…none of that runny sauce that’s sold as catsup or whatever.

I've never had meatloaf. I don't even want to try it if it has ketchup. I don't like ketchup, so I use chili paste.

I've never had meatloaf. I don't even want to try it if it has ketchup. Gusick, substitute Heinz chili sauce for ketchup. It's a great substitute for ketchup on anything. It's not as sweet, and thicker.

One thing I did was cook my Meat Loaf in my smoker. Haven't gone back to using the oven since.
