Locally try Eddie’s sausage at Brookshires.
It comes in smoked and jalapeño flavors.
Best I’ve found anywhere close to Longview.
Back years ago when I lived in the area Skinners and Gene’s Grocery use to make a good sausage.

We had a party I cooked for a while back (60 people) and I had sausage from Fischers, Windthorst, Wenzel, Opas and Walmart store brand beef sausage. Oddly enough the Walmart beef sausage was the most popular.  Last time I was in Walmart I couldn't find that same sausage.

Conecuh is some good sausage, think it is made in Alabama, have seen it in Brookshires, I am pretty much spoiled on german sausage made in Muenster by Fischers, Hess Meat, and a bunch of my family that makes it. Conecuh or Down Home are my go to for commercial sausage. I make and smoke my own sausage and boudin but never pass on Conecuh or Down home.

As TMD says Mikulik but remember you have to cook it not just heat it! Another San Angelo product is Bruders which is also raw unless you get the dried version. They are in many HEB stores in Central and North Texas so check out their website. They also sell in Lowes in the heart of Texas including Brady but strangely enough not in the San Saba store. This is like the sausage my great grandpa Speck made in his smokehouse after processing hogs 70 or 80 years ago.

Kuby's is awesome. Real German sausage. That is where the European imports all shop for authentic german food.

Bucees jalapeno and cheese sausage is really freaking good, if you're in the Mansfield area Texas Slabs meat market has some awesome stuff as well

Bucees jalapeno and cheese sausage is really freaking good, if you're in the Mansfield area Texas Slabs meat market has some awesome stuff as well I really like that place (Texas Slabs) but have not tried any sausage yet..
