For a corn meal based batter use Louisiana Fish Fry in blue package. Peanut oil at 375F. Got to keep the oil temp between 375F and 390F. Don’t get the oil too hot or you will burn it. Too cool fish get greasy.

Speckled Trout for the fish. Throw in some hush puppies. Martha White is a good hush puppy batter.

I have not had walleye in 40 years. One of the few things I miss about the panhandle. But that's ok , I have a freezer full of crappie.

Bass grilled with salt pepper and lemon juice is the best, Scale them and leave the skin on so all the meat doesn't fall into the flame.

This sounds crazy .... but it works.

Pour 1/2 can of beer in a bowl, squirt in about 1 tablespoon of plain yellow hot dog Mustard. Stir .... drink the other half can of beer.

Dip fish in beer/mustard, then Roll in cornmeal of choice and fry in HOT peanut oil.


I'm glad there are wine drinkers in this world ..... it saves more beer for the rest of us.

I like crappie and or blue cat around here. Walleye and tiger perch up north are very good too - but not worth the trade to live up there!

Put the cold fish in a zip lock bag and squirt in decent amount of plain yellow mustard. Coat fish good. Keep fish cool - cold. Remove from mustard and shake in a second bag or breader bowl, with Louisiana Seasoned Crispy Chicken breader. You can find this about any walmart, etc. Yellow box. Just coat lightly. Keep the fish cool - cold.

Peanut oil is my choice, and keep it hot - about 375 is my preferred temperature. When they float and bubbles let up, they are done. Just a few minutes - don't burn them. Rest on paper towels. Serve hot. Cold fish and hot grease make a nice crispy but not greasy finished product!

Ditto what fish spanker said , except I use Zaterains shrimp fry. Something I tried for the first time last week was frying a striper filet in a pan with a little olive oil and salt/pepper. It was better than I expected.

I dip my crappie fillets in an egg wash then in crushed saltine crackers fry in 350° canola oil for 4 min. I like lemon pepper. You can add any seasoning you like. We had fish tacos on Tuesday

best recipes for fish is a really wide open subject. Types of fish matter. After moving to saltwater offshore years ago, I'll never go back to many of the freshwater fish I grew up eating. Try a potato crusted wahoo steak over creamed spinach, or drizzle red snapper filets with softened butter and parsley after cooking on lemon slices. Tile fish remain to me to be one of my favorites. With the consistency of crabmeat, these fish are delicious! Not to mention fresh yellowfin steaks or tuna ceviche fresh on the boat.

This works for me for crappie and LMB
1. Dry fillets with paper towels
2. Dip fillets in plain flour
3. Dip fillets in butter milk
4. Coat fillets with panko seasoned with salt and pepper
5. Deep fry in peanut oil for 2-4 minutes depending on the size of the fillet.
