The Old Hickory pits were designed with a firebox for logs of wood (not pellets) 2 logs for 20 briskets for 6 hours? Not much difference, wood is wood. Heat + Smoke x Time

No hate for pellet cookers. They are great, especially for the convenience and consistency.

The 700 Bull I have gets hot it just takes a bit...the My Bullseye version gets screaming hot (over 700 degrees easy) - I have added the Grill Grates to my 700 and get good char but seriously if you want to cook fast I throw it on the Viking. No doubt the 700 Bull is my favorite cooking implements ever - seriously good smoke, reliable, constant temp, my poor stick smoker is extremely lonely. If I ever went back to a stick smoker it would be a Yoder.
Whether you think you can or you can't, you are probably right.

I have a RecTeq 590, a Weber Genesis and an offset smoker. INo pellet smoker will out perform my Weber for searing at high temps and the Weber gets to 550-600 quickly. I also have a Weber Genesis and noticed lately that I cannot get it above 450 when I have all 4 burners going. I'm using full tanks as this started last year. Is it the colder temps doing this? Should I look into a new regulator?

I have a recteq pellet , smokes or long cooks it’s phenomenal but quick cooks or something that needs some heat or marks I am underwhelmed.
I am about to order and bolt on a camp chef seer box on that mofo , I feel like I am cheating on recteq but the camp chef seer box will get to 900 and get after the meat and veggies.
Thoughts ? This is the perfect combo for a reverse sear, def do it.

I got a Recteq Bullseye for everyday cooking. It gets up to 700 degrees if you have room for a second grill. Its held up yell too, but you have clean it a little more often then other grills or the vents will clog and it will start smoking out the hopper.
