was fishing near jones lake and caught this nice fish. thought i would post it so everyone could see. it was 25" and weighed 7 pounds 14 ounces.

Like with any fish, you can scale, head and gut. Then cut into 1.5" slabs perpendicular to the fish. Or, you can fillet it by either using a fillet knife starting behind the head and cutting down to the backbone, then turn the knife blade toward the tail staying against the backbone as you cut toward the tail. You then can either cut it completely off and then fillet the skin from the flesh or don't cut the slab off the tail and flip it over and fillet against the skin removing the flesh in one single cut.

Another way to fillet - make a downward cut right behind the head but in the middle of the body keeping the point cutting all the way to the tail. Then follow the backbone and fillet it out to both side fins removing all the flesh. Do this on both side on top as well as the bottom which will give you 4 fillets with the bottom 2 much smaller.

Oh, awesome flounder there! Looks like you been fishing "my backyard" and it's a good area. Yep, grew up in LaMarque and fished Jones Lake and West Bay all my life and there are some really good fish there and will always be...along with some hot spots too.
