The other white meat, Pork is racist And just whom was it that appointed you in charge of assigning this as pork or white meat? There is no way you could know how this person identifies or if they do. Slice thin - velvet the meat with baking soda or with topo chico (makes very tender in short order) spice it up and pan fry to medium rare - yum.
Whether you think you can or you can't, you are probably right.
