Marlin
Still pretty good at the Lighthouse and Los Arcos on bait and lures, all marlin between 80Lb to 150 Lb, also few Sailfish, we caught and released 1 sailfish on Monday, 2 striped marlin on Tuesday, 1 striped marlin on Wednesday, 1 striped marlin on Thursday, 3 striped marlin on Friday and 1 sailfish and 1 striped marlin today.

Dorado
Dorado fishing still very good at the Lighthouse, Los Arcos and Migrino,we caught the limit every day, Dorado between 10 Lb to 30 Lb on lures and bait.

Tuna
Good when you find the schools, between 15 to 20 pound, they are biting at the Lighthouse, Los Arcos and Margarita on cedar plugs.

Wahoo
Very few reports, we caught a 25 Lb wahoo on Monday.

Rooster
Starting to show.

Inshore
Very few skipjacks and few Roosters.

Jc’s Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER:
Reviewing the forecast for Cabo San Lucas Over the next 7 days and the average daytime maximum temperature will be around 29°C, with a high for the week of 30°C expected on the afternoon of Thursday 10th. The average minimum temperature will be 19°C, dipping to its lowest on the morning of Saturday 5th at 19°C. The coming week will remain predominantly dry. On the whole winds are likely to be moderate.

Traditional Yellowtail or Tuna Teriyaki
This is a traditional recipe for yellowtail, modern teriyakis are often too sweet and, while you need the sugar to help caramelize the sauce, too much makes a dish cloyingly sweet.

INGREDIENTS

1 1/2 to 2 pounds yellowtail (or other fish steaks, as described above)
Salt to taste
4 tablespoons sake
4 tablespoons mirin (Japanese sweet wine)
4 tablespoons soy sauce
1 teaspoon sugar (heaping spoon)
2 tablespoons vegetable oil (peanut is best)

INSTRUCTIONS

1. To prepare the fish: Salt the fish steaks well and set aside at room temperature for 15 to 25 minutes.
2. To make the teriyaki sauce: In a small pot, bring the sake, mirin and soy sauce to a boil and stir in the sugar. Turn off the heat and set aside.
3. To cook the fish: Using a large saute pan, get the peanut oil almost to a smoking point over high heat.
4. Run the edge of a butter knife along the skin side of the fish steaks, scraping off any moisture.
5. Turn the heat down to medium-high and lay the fish steaks―skin side down―in the pan.
6. You might need to press down on them with a spatula to keep the skin from arching up. It'll relax in a minute or so.
7. Cook the fish 2/3 of the way on the skin side, then flip. It should come off easily, as the skin will be crispy. If you have skinless pieces of fish, just cook it 2/3 on one side.
8. Pour in the teriyaki sauce and turn the heat down to medium. Spoon some on the skin side of the steak and cook for 2 to 3 minutes, longer if the steak is very thick.
9. Flip the steak one more time to set the teriyaki glaze. Gently shake the pan so it doesn't stick. Cook for 1 minute.
10. Serve immediately with steamed rice and a salad.


SUMMER TANTALIZER
Margarita Cocktail
Served straight up or on the rocks, the margarita is one of the most popular cocktails of all time. And for good reason! It will cool you down on a hot day or warm you up on a cool day. Any day is a good day for a margarita.

INGREDIENTS

1 tablespoon kosher salt
1 1/2 fluid ounces tequila
1 fluid ounce orange flavored liqueur (such as Cointreau®)
1/2 fluid ounce lime juice
1 cup ice
1 lime wheel

DIRECTIONS

1. Sprinkle salt on a small plate. Lightly wet the rim of a cocktail glass or margarita glass with a damp paper towel. Dip the moistened rim in salt to coat. Set aside.
2. Combine tequila, orange-flavored brandy, and lime juice in a cocktail shaker. Add ice and shake until chilled. Strain into a salt-rimmed cocktail glass or a salt-rimmed, ice-filled margarita glass.
3. Garnish with a lime wheel.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
