Kentucky Kernel seasoned flour and Panko breadcrumbs mixed half/half, spray with olive oil, add more Panko, spray again
turn over half cooked, spray olive oil again

I use this video to make crappie cakes. I made a batch and cooked them in the air fryer for 12-14 minutes at 400 degrees, flipping half way through. Came out great!

Well its crappie, so many ways work. I've played with mustard rub and such but favored simple egg white wash then dredge through mix of panko bread crumbs/season salt/parmesian cheese. Light spray of olive oil so they will brown. Bon appetite!!!

50/50 mix of panko and parmesan cheese. i do a pre-soak in a 75/25 mix of brown mustard and franks hot sauce. cooks in about 10 minutes. great stuff.

Open wastebasket and insert. sounds like you've been doing it wrong if you can't get better results. i haven't had a single complaint from anyone i've served. no it is not the same as deep fried. and no, corn meal doesn't work in the air fryer. just my 0.02.
