This is how I do it on the 4th of july! This is one of two briskets I cooked yesterday. Your thoughts?

That looks great. I wish my briskets came out that good. I seem to have a little trouble with briskets, what are the steps in cooking your briskets.

MMMMM......Brisket........

We always load up the freezer with several briskets when the stores put them on sale.

Here's a few things I do:
1) Trim the hard fat that won't render
2) Before applying the dry rub, coat with a thin film of mustard
3) Use lotsa dry rub. It should be completely covered.
4) Use wood chips/chunks sparingly. I'll put wood on one time at that beginning of the cook. You want smoke but not to an extreme.
5) After 4-5 hours, I'll spritz it with liquid every hour. I use apple juice diluted with water.
6) Cook it long and slow.

MMMMMMM......Brisket.........

when i cook briskets outside they turn into brickets
