Maybe someday, an innovator can develop a use for that slime. Somebody already did- called epoxy. At least it's the equivalent of epoxy when it dries on a boat deck.
You get out of it what you put into it!

Hardhead catfish taste _exactly_ like catfish, because they are catfish. They're curiously about half head tho, so you get much smaller fillets than you're expecting. I recommend keeping every single one you catch and either eating it or using as bait. They have a spring migration, so if you're unlucky enough to be fishing near a pass at that time you will catch nothing else. A note on the stings, all catfish have venomous and barbed spines. Heating renders the toxins. Personal experience can attest. https://www.webmd.com/first-aid/catfish-stingPeople only hate catching hardheads because they've spoiled by the fantastic fishing on the Texas coast.

They might taste like Momma’s pecan pie. I’ll never know.
But please go catch a dumpster load. And talk as many people as you can in them catching all they can too.

Nasty slimy things are a pain in the tail. Luckily I only fish the surf in saltwater and don’t seem to run in to too many of them when fishing with live bait, especially if I’m using bigger 6-8” mullet. Getting finned by one can be nasty, potentially deadly if it gets infected, getting stuck by a channel cat is not even close to getting stuck by one of those nasty things. I’ve never eaten one, however, I have eaten gaftop and they’re not too bad.

One did a double back flip off my hook and stuck a fin all the way thru my shoe and out the bottom of my foot. A few days later, it turned green. I had a Vietnamese doc and she took it seriously.

We've eaten a number of them. They are not nearly as good as gafftops. We'll keep every gafftop we catch over about a pound.
We need to be in a tight spot for dinner to keep hardheads - much fishier flavor - and not fishy in a way we like like mackerel.
For reference, we'll keep Jack Crevalle before hard heads.

There is a good fishy taste. I would put Bluefish in the category of good fishy taste. The more I read about fish the more I realize how fish are handled after the catch makes a big difference on flavor and storage potential.
