I have had a couple of PM requesting to purchase 1 or 2. If I made 15 or 20 do you think they would sell?

Depends on how much you want to sell them for, but from the way they look I would think you will get a lot of interest in them. You have good ideas on anchoring them except for the one with the rope. The rope would deteriorate over time. I like the all thread and nut idea the best.

They might work as cover, but not structure.

You might add more horizontal tubes, bass like to get under cover. Scuff up the PVC to get more algae growth.

They will work great and should last forever. Key for putting structure in the lake is getting it in the right place and keeping it there. Seems someone will drag it off dragging a anchor through it. Put some on the edge of a 15 ft break or point. Stays there for a while them someone drags it off. You find it out in 25fr and fish donโ€™t get on it.
