Y'all know I am not a meat hauler. I turn 90% of the fish I catch lose. But this weekend Wyatt said he wanted to take some home and eat 'em. So, I kept three fish. two 7 pounders and an 8. I really don't like the little ones. I like thick fillets that I can cut into strips and fry up. As a member of the Texas Trophy Catfish association, I will not keep any fish over 10 pounds. I weigh them all and I just kept these three. I clean fish carefully so the meat is pure white. I cut out the blood line and all the red meat. I don't waste anything though. The dogs know when I'm cleaning fish, they have a treat coming. We boil the cuttings for them and they love it. Anyway, in our house you can't have fried fish without potato salad. I make it just like my mom taught me. Green peppers, onions boiled eggs and russet potatoes. To top it off, some jalapeno corn bread and a cold beer.

All made outside on the patio with the kids playing and soaking up one of the last warm days of the season. The plate pic doesn't do it justice... Hope y'all had as blessed a Sunday as I did...

That looks great Tim. Nothing wrong with keeping some for the table. We usually keep quite a few in the spring. A friend of mine is a fireman in Dallas and his team wanted some fish to cook at the station, so we went out and caught them enough for 3 meals. He already told me that they are requesting more. HAHA

Looks good Tim!

God put us at the top of the food chain for a reason - enjoy them fish!

My family (and friends) love fried fish... also grilled. I clean them like you, pure white. Jackie Kennedy taught me that a couple of years ago, and it makes a huge difference. Several of our friends cant believe the blue cats taste as good as they do - cant tell the difference between blues and crappie.

We camped this weekend at Guntersville State Park with the intention of chasing big blues. Mother Nature had a different idea. Saturday was a high of 50, north wind at 20mph. We hid behind a bridge and let the grand kids catch yellow bass all day.

That wind always seems to be against us! It either blows to hard or not hard enough! It would be torturous to be on Guntersville and not be able to fish for big blues...

That is awesome bud!

I am known to enjoy some tasty catfish myself. Especially like the blues. I prefer them to most fish! If they were not so tasty I would likely have not gotten into chasing them. And like you said, all the big ones go free. I kept a few 8lbs but prefer them around 3-5lbs for the table. Yummmm
