A man is in New Orleans this weekend visiting relatives. As he was driving down from Dallas, he just realized how quickly time passes and that he was three months behind on his 2021 GMC Denali payments. He plans to visit the bank when he gets back home and bring the payments up to date. So are there any suggestions for a "safe" place to park his beloved Denali? Asking for a friend.

Sorry, no help on "safe" place to park. Actually I would expect most of Louisiana area to be considered unsafe this weekend. Hard to believe, for me anyways, that your "friend" got 3 Months behind by losing track of time. Seems there just might have been some "memory jogging contacts" sent his way to get his clock readjusted.

tell him to put a bed in the back, gallon of water up front and call it home till he can catch up, they can't evict a tenant due to non payment of "rent".

you can do online payments easy enough, might even try paypal.

if he crosses state lines with it and gets pulled over there is a chance it will come up stolen as well, that far in arrears and crossing state lines?

Yes, online payments or contacting GM and explaining any adverse situation would probably keep the repo man away.
