The best poke I ever had was a girl that lived on grill cheese sandwiches and chicken fried steaks. I mean she would never, ever eat, order, or cook anything else. She would put other things in her mouth but as far as a meal it was only those two items. Other than that, she was perfect and good to go anytime, anywhere, but it always weirded me out. If she would have just had an enchilada every now and then I might have stuck it out.

Youโ€™ve got to butter each side of the bread, put cheddar on one side and pepper jack on the other side. Put it in a skillet. On the side you fry an egg over medium. As the two cheeses start to melt pull it apart and put your egg in the sandwich. Continue in the skillet until bread is a golden brown. Bacon or sausage can be added also.
