If you�re looking for white meat, try Black bass. It's all white meat and the best tasting also easy to clean. The only problem is you have to save them for a fish fry because the limit is so small. The large ones are good too unlike catfish.

The best eating size cat is any you catch legally. If the catfish is cleaned and cooked the right way they all taste good. I have never had one taste bad and I have eaten them from 12 inches to 80lbs.

I am very perticular about the size of catfish I consume somewhere between 2 lbs. and 100lbs yep that will work.

I go along with the 1 to 2 lb blue or channel cat.

Most any size Blue or Channel is good to me, I can't really tell the difference in taste between the two. I don't much like yellows though and don't bother keeping them.

I think those that keep the larger cats bleed them and remove the dark meat and fat prior to cooking. I have eaten them that have been treated in this manner and they were very good. I like the smaller ones because a fillet can be fried whole and there is no dark meat. Actually, for me it is hard to tell the difference between a well treated large cat from the taste of the smaller ones. I just seem to catch a lot more of the smaller ones. Regardless, they are all great.

i am with most of these guys, anything from legal size to about 10 is perfect. Cuz i ain't picky!

I know the 0-5lbs range taste great--cause that's all I catch.

I so much into catch and release that I don't give those bigger ones a chance to bite.
