Trying to figure out a boat plan. I've seen some places saying a empty 12ft Jon weighs 100, then others are saying 190. I'm wondering if it's light enough to drag off a trailer and then lean up against a wall in the garage, in some fashion. Or possibly drag it through the side yard, through the 30"~ gate and put it somewhere in the back yard. I'm thinking I will start off with the $100 30lbs trolling motor on the transom, get a nice fish finder right away or after a few trips. Possibly upgrade to a gasoline outboard at some point and maybe install a spotlock bow mount trolling motor, if things really take off.

Does anyone know how much these really weigh? I plan to assemble and disassemble every time I move it.

Unless you can get it on some scales, the best bet would be to go to the manufactures web site. Most 12 ft jons will not weigh 190 lbs. My last jon boat was a 16 ft WAR EAGLE , with a 48 inch bottom and per web site weighed 325. .100 gauge alum.

A lot will depend on the type of boat. Most all welded jon boats will be pretty heavy while the rivited ones will be much lighter. Stick with a 12ft rivited jon and you should be good. The rivited ones usually leak a little bit but it's not a problem. I grew up in jon boats all my life in Louisiana and we always used the thin metal rivited ones because they were light and we could throw them in the water anywhere. Get a small portable outboard you can screw on the back and your good to go and don't need a trailer.

Although my small boat is a Pelican Predator the answer your question is pretty easy. They have a portable dolly with wheels that mount your transom. Attach the wheels, flip the boat over and you can pull it around with one hand. My little boat weighs 144lbs and did this for years. You can also go to Y-Tube and build a dolly for cheap. I like the built ones better because you don't have to flip the boat over and you can use larger wheels. Either way you can also pull the boat down to the waters edge if a launch site is not close by. I have a little trailer for it now but I still use my little dolly when I throw the boat in the back of the truck instead of using the trailer.

I've modded many jons and was able to flip empty hulls over up to 16ft by myself. 12 ft rivited jon will be easy to handle in the fashion you are suggesting. A flat floor dolly helps doing what want if you lack strength.
