Tip for those knives, use either the Mister Twister blades or the American Angler Shark blades. If using the shark blades, you will have to remove the little black pieces at the bottom of the blades where they go into the knife. Thos is what we do and it works amazing.

I pick up the meat and hold it up while taking the skin off. Helps get all the skin plus takes a load off the knife. Another thing that might help, filet the fish in your natural position. I always cut both sides left to right.
