I suspect that many on here were taught at an early age to salvage the cheek meat from larger fish, particularly from fish like grouper or flathead catfish. One of my favorite treats when we go to Alaska is halibut cheeks. Alaskan halibut have many local or colloquial names - 'chickens', 'barn doors', 'flatties', and so on. They're often called "butts" when one is too lazy to say the whole word "halibut".

I always get funny looks when I say that I'm going to have fried butt cheeks for dinner.
