I am in the same boat, my daughters 4 show pigs are ready and July is the earliest butcher dates I have found

Yes. They were my first call. They do an amazing job. But September is the earliest date.

I've seen the same thing with beef over the past 6 or more months. People swapping dates at processors or trying to buy people spots. What's going on? Are more and more people buying their own livestock instead of buying it at the grocery store than years past or what? I've never seen so many people on FB trying to find someplace where they can get in.

Go redneck on it. buy a freezer and a couple knives grinder, and a vacuum sealer if you don't already have them.
Oh and a shovel to bury the evidence.

Well I got the pigs into Hamilton meats in Weatherford in two weeks. Hopefully this place does quality work. And yes I was getting ready to give it a go myself, but would rather support someone's business.
