Robert, You can cold smoke some cheese with that this time of year, Just wrap it and let the smoke penetrate for a few weeks.

Just a tip here. Before I use the pellets in my TUBE, I put the pellets in a small bowl , then in the microwave for a minute to remove any moisture they may absorbed. I use a propane torch to fire up the open end.

I have been using wood chips, but will try pellets next time. I use 2 tubes. I light the second tube 1 hour after the 1st. They do pretty good

I use a propane torch to fire up the open end. I use a propane torch or a heat gun, Both work well. I have smoked a pork shoulder in cold weather then in oven or roaster or crock pot later. Add some head country and great pulled pork.

throw two of the long smoker tubes on a weber and can roll some decent smoke. Just me and the wife, weber with a smoker tube and pellets works good enough for us for Ribs, chicken etc.
Thanks, Billy
