I'd use it but would probably go for a bisque also

i think it would fall apart. maybe add it in chunks about 15 min before serving and don't stir. i know that redfish in a courtbullion is treated that way.

On the coast I sometime use redfish cut up to small cube size. Instead of stirring the pot after I've added the fish, I tilt it and swirl around. That way you don't tear /shred the cooked fish.

After spending a small fortune for crab meat in my last Gumbo , I am thinking of using crappie in my next one,

If I do , I will just sauté the crappie in a skillet with a little olive oil and Cajun seasoning. Crumble the crappie fillets
into the gumbo in the last 15 minutes of simmering.

Back to the sand bass, I know of people that cut in strips, boil it like shrimp in crab boil.

Dip in cocktail sauce, I have not tried, they claim it’s good.

Dump cubes in at end. Fish only needs to get to 135 to cook. Dump gentle stir in and wait 10 minutes. It will cook fast.
