At first it seemed like I would not be cooking this Thanksgiving because my daughter had it all planned out
but then she could not get a turkey breast and instead ended up having to get a full bird, which she has never
cooked so dad will be doing a bird this year after all

I have been pondering the issue of cooking with the mesh top over browning and was looking for a way to keep that top
on during the cook and I have found something I will be trying tomorrow, tell me what you think.

They come out good when you cook them in there. My dad cooks one in there. Great for chickens too

I’ve always cooked with the mesh top on. Never been an issue for me.

Yeah, a lot of feedback from other sources say to leave it off, cover last xx minutes but I've never had an issue covering it more than not. Good luck!

Always left the cover on for the entire cook and always had crispy skin and not burned.

I am gonna try the smoke and fry method. Little nervous, but I made 10 lbs of deer sausage today and have a ham to smoke also. We will eat way too much anyway.

I usually kind of mix it up on my BE. I'll cook with it off for about 30-45 minutes, then put the cover on for about 15. Repeat until done, but always use the cover for the last 15ish minutes. Works great for me.

Love the Big Easy. I do leave the lid off except for the last half hour or so. *Unless the leaves are dropping, then the lid goes on of course.*
