I don't have a favorite, but a city I've learned to really appreciate, "and the surrounding country areas," is Glen Rose!

I really enjoy it, and I consider the top, or beginning of the Hill Country as it goes down.

Addendum: Marble Falls and Wimberley are nice as well.

Boerne. Nice town in the Hill country. Easy drive to San Antonio, and New Braunfels, Fredricksburg, Bandera, and quite a few more are all close.
