SO i got tried of my "smart" doorbell not working in a myriad of ways. So I replaced it with a regular dumb one. The wires for the doorbell are coming through the brick. And as is normal in brickwork there is a little recess area between bricks where the mortar is. Point being the doorbell isn't sitting flush against the brick, there is a little gap about 1/8 inch or so where the mortar joint is. Should I be concerned about the wires being exposed to the air and elements through that little space? I assume copper is pretty hardy so I'm thinking it is fine. Should put a dollop of caulking or something to fill that gap?

yes, seal it up.
copper will last forever but will get the green grunge goin on and that will cause problems later.
put a dab of caulk on back of button and mash it to the wall, be sure it is enough to seal the wires.

You have to be very careful with doorbell wires - very thin and will break easily leaving you with no wire to connect. If they break off at or near the brick you may have a problem. I always use small screw anchors drilled into the brick to attach the pad and leave the wires free. Bottom line - be gentle!

Bottom line - be gentle! yeah that is the way mines setup i just wish there was a "standard" for distance between screws on doorbells. My anchors are apparently 2.19 inches apart, and seemingly not many doorbell buttons (at lowes at least) have the screw holes that far apart.

SO i got tried of my "smart" doorbell not working in a myriad of ways. So I am not the only one! The installation directions tells me it is a simple 5 minute procedure. Do not believe it I may put the sledge hammer out today.
