I always scale, gut, and cut the heads off on all of my Bluegill/sunfish.  Side Note: I do have friends of mine that always fillet them. Either way they are simply delicious!

I almost always fillet. And I remove all of the red meat.

I like to fillet and cut in strips about one half inch wide. Boil in shrimp boil, then chill on ice and eat with cocktail sauce like you would shrimp. You have to handle them carefully getting the out of the boiling water but when chilled they have a similar texture to shrimp.

I have recently started filleting my bream and only keeping bigger ones. Fry them up as cajun popcorn but the boil method sounds good.

If it's a day outing all Bluegill/sunfish are released. If it's an overnight trip or camping for a few days we will keep some and leave the head attached but gut and scale and stick them on a marshmallow skewer or a green branch and cook them over a fire and sprinkle some "Slap Ya Mama" Cajun seasoning on them.

Scale & gut (and usually grill). It slows down the eating process, but you get pretty good at pulling out the bones once you've done it enough times. It is kind of like eating crawfish - don't rush, just take your time and enjoy a slow paced meal. If you are looking to devour a bunch of meat in a short amount of time, you'll want to fillet. Although a rough estimate, I'm guessing 1/3 of the fish's meat is lost when you fillet. I prefer to honor the fish without wasting too much.

Side Note: Wrap some bacon on them also.

I fillet all my fish with the exception of the Bluegill/Sunfish. I scale and gut em.

Po Boy is on to something. What he does works on about any type of fish. In the past, I have used scrap pieces of fish from fillets and then did the crab boil thing. Works out to a poor man's shrimp cocktail.

I do not target sunfish. With that said I fillet all my fish. If I was catching sunfish for the dinner table I think I would scale and gut them.
