If you want to go healthy, i suggest crappie cakes. i boil mine with Old Bay, refrigerate, then mix with panko bread crumbs and additional spices, a little mayo and spicy brown mustard, green onion.
broil in oven for 5 minutes. you can cut out the mayo completely if you like depending on how healthy you want.
i recently had crappie ceviche and man that was tasty. that is about as healthy as you can get, raw fish, lime juice and some crackers to scoop it!

I got this idea from a John Godwin video. It is great.
Parmesan Lemon Butter Grilled Crappie 1. Get the grill hot and smoky at about 375 degrees. I heated a cast iron griddle on the grill. Any grill safe dish should work. Also, I used apple wood chips for a little flavor on my gas grill. 2. Season the fish with lemon juice and seasoning. I used Slap ya momma Cajun seasoning. 3. Place fish on hot griddle, sprinkle with grated parmesan cheese and drizzle with butter. 4. Cook for 15 minutes or until cheese is melted and fish is cooked.
I get some foil and make a bottom with folded corners... kind of looks like a shoe box lid. Leave the sides of foil sticking up about 6-8" on each side.
Place the crappie in the foil and season as desired. I put on pats of butter ... 2 on each piece of fish. Set it over grill set about 375-400. Leave the foil open on top and cook for about 3 minutes. Then close up the foil with space left over the fish and cook another 2-3 minutes. Then eat it!
Whole grilled bluegills (you can do crappie the same way). Scaled, beheaded, gutted. Soak whole fish in water with a little salt for 15 mins (it helps). Rub skin with a little olive oil. Rub in seasoning (your choice). Grill at 350 degrees for 15 mins per side or until well cooked. The meat should slide right off the bones. Skin is seasoned and delicious.
