Checked all plugs with inline tester. Everything was good. Did you ever find/borrow a more appropriate prop? The prop you have would almost undoubtedly bog down a 225. Why struggle trying to find an engine problem that may not even be there when you could do such a basic test as run another prop?

I ran my Yamaha 225 with a 15.125" 27P Yamaha prop on a 20' Champion bass boat and it would turn 5700-5800 RPM and almost 70 MPH, so if the the OP's motor is running correctly, it should turn the 27P a heck of a lot faster than 2700. I think he is going into limp mode or something else is wrong.
What is prop to pad height? Fuel system problem? Is throttle linkage opening up the throttle all the way? Is ignition timing correct? Is this a Ficht Motor (Ficht Motors can be really good or really bad but almost put Evinrude out of business because of problems back around 2000)?
All that said, I changed to a 25P 4 blade to get a better hole shot. With this prop and prop to pad at 3.5" boat will run 64 MPH at 5700 with two guys and loaded fishing gear.
