What is the best type of catfish to eat?

I was just wondering what was the best type and size of cats to eat. I have eaten many a channel cat, but I have heard that flatheads and some blues are good as well. Just wondering what you guys think.
Also what's the best way to perpare them??
A five spot for a shot and a beer? And you wonder how we wound up here.

i like to get mine a couple a months after the spawn ... about a inch long ... cook'um up all together like a big pot of beans
regards albertking catfishing is now an industry ... it's best for the industry to eat baby catfish

Blues 1-2lb, on the bone, deep fried. Mouth is watering. Aps are pretty darn good too. Who's kidding who, they're all good!

Don't forget about the little old "bad-mouthed" bullhead out of clean water. They tasted fine and so many folks don't think so because of either what was told to them by others or they had some from not-so-clean ponds/tanks or muddy waters. At least the ones I catch at Toledo and Rayburn that are too big for Op lines go in for cleaning and they eat just fine. Special bait isn't necessary for them either, beef liver, chicken hearts/gizzards, beef heart/kidneys, beef tongue, beef spinal cord or just about anything.
Now, I don't throw my blues or flatheads away to target only bullheads...I do like my blues and Ops.
Give them a try next time you catch one or not...

Flathead is primo grubbin' for sure! Small channels and blues up to 4 lbs. are dern good too though. I've eaten lots of bullheads in my past...not so much anymore though. They taste fine if ya get 'em out of a good clean place (sand/gravel bottom is best) and clean 'em right.
No fish is too good for the grease.

I like flatheads about any size. Never caught very many big channels so they are always good, but I usually release any blue over 10lbs.

If I am on the fish & catching lots of 'em, I will cull all the bluecats or give them away & keep the channels & yellow cats, they are my favorites to eat!
Keep your powder dry & don't fire until you see the whites of their eyes!!

i like all cats. but i like yellas about 5-10 LBS. then blues and channels around 2-10 LBS.
Justin 63lb, 2 58lb, several 40's, 38lb, and several 20lb yellas.
