My understanding is they are less absorbed in the digestive tract resulting in less effect on blood glucose a common one is sorbitol which if you are not used to it will cause . They are used in conjunction with artificial sweeteners as they are not very sweet.

You are correct.
I went to sugar and carb free diet last year. Sometimes I will have a treat and eat Dark Chocolate Peanut Butter Cups, made by Lily's. It has the Erythritol in it and doesn't have gas side effects.
