Anybody ever eat gar? How would one prepare it? I've seen the Cajuns only target catching gar and would not be happy when they catch a catfish?

I have, good fish for baking/broiling or long cooking without getting mushy. Don`t eat the eggs, I hear they are toxic.

i have and don't care for it. if fried, it's better cold the next day, JMO, if made into gar balls there's so much else in the ball that you can't taste the fish. i'm not a alligator tail fan either. much rather have the shoulder.

Gator gar back strap cut in 10” lengths. Filet into a 1” thick sheet. Stuff with Boudain, wrap with bacon, smoke till bacon is done. Awesome!

If your talking to me.. gator gar meat is very white and has a great texture for smoking.. It’s really good if you have never tried it! Now I avoid needle nose and spotted gar. It’s a little course for frying to me. But I prefer smoked cat fish over fried also. Smoking separates the fat from the meat. Now crappie I will fry but grilled is awesome too.

Back in the day when frozen food first came or when it started getting popular fish sticks were made from gar. It is a real white firm meat that I think tastes pretty good. Today Fish stick are made from haddock or cod and they are not bad either.
I fish on the edge and stay out of the middle
