Several great ideas thanks y'all!!
I really wish we could make a weekend out of it, unfortunately we have the two very large dogs and finding a sitter for them right now is difficult....
Several good ideas here! Keep them coming I'll look over them in detail and pick one. I'll give yall a full report we're definitely going to do one of these on Sunday.

Beautiful country just north of St. Jo and Nocona. It's like the hill country, but without any of those dirty libs. There's an escarpment/mesa like drop off into the Red River Valley. Unique for this part of Texas. Cross the Red River on the small "Indian Bridge" and immediately u-turn and cross back over. St. Jo is the intersection of the Chisholm trail (cattle trail up to Kansas City) and the California trail (gold rush trail) If making it a weekend, you could stay at the Blue Ostrich Winery and Vineyard guesthouse.

Make it 2 days. stay overnight in Ingram The road between Bandera and Leakey is one of the most scenic in Texas I completely agree with this statement. Every Texan should drive that road.

Several "look outs" along the mountain drive. Stop at one, get down on one knee and re-ask her to marry you. That little misty moment on the mountain will get her mind off of the postponed wedding plans and probably make you a very lucky....

Keep the bar set low early on. If you don't think you've set it low enough; you haven't, and take it down a couple notches. Save that trip to Ennis for your 5 year anniversary.

Pretty country, fortunate to have grown up in Muenster, been all over that country

SE Oklahoma was going to be my suggestion. I've backpacked along this and it's pretty country (Ouachita National Trailway)

Thank you everybody for the suggestions!
We ended up taking Docs suggestion.
Headed up Bowie way and saw the world's largest Bowie knife! According to the plaque there it's having positive impacts on all of North Texas! I don't question plaques so yes...
Then to the Montague County Court House and old jail. Cool building! we strolled around the old Town square did a bit of window shopping had a nice chat with the Sheriff and then headed on the Saint Jo where we visited the old Town square and... did some window shopping! Also checked out a couple of historical markers in town.
Now north to the Indian bridge! Made our way across the Red River into Okie Land. Turned back south and onto Spanish Fort. Interesting site for sure! I then tried to locate the Devil's Backbone. We must have gotten bad directions because the road I was told to go on was closed. There was a sign saying it was a research area and posted private property. No worries.
Onto the Blue Ostrich winery for some tasting and hors d'oeuvres! Both excellent and fairly priced! I was surprised as often those types of wineries are really expensive. After research, we brought two bottles of our faves home. The staff there were incredibly helpful and very friendly! Definitely recommend stopping by this place.
After a bit more of just driving around and a pit stop at the DQ drive thru for ice cream, we headed to Munster and a stop at the famous Fischer's Market. There is a reason this place has 4.8 stars on Google reviews... It's awesome! The meat counter was VERY busy so I settled for some frozen sausage of varied flavors and a few small blocks of unique local cheese. She grabbed some veggies and fruits... Not sure as I'm not into that stuff but she said they looked very fresh and we're well priced.
The landscape is still very green thanks to heavy spring rains. There's also still a good amount of wildflowers blooming.
If you're looking for a nice way to spend a day with the lady I'd recommend this or similar. With the movies, restaurants, live music etc. all but off the table...this was a nice way for us to spend some time together outside of sitting on the couch. Also a good way to support these local small businesses!
I give this trip 4.5 out of 5 DQ banana splits
