It looks like it turned out pretty nice even though you would have liked to have pulled it sooner . What temp and time did you cook it . I have a Big Green Egg that is difficult to keep below 275 deg .

Love leg of lamb. Looks awesome! I like it medium rare (135 internal temp) which scares some people.

From what I read 145 was supposed to be the perfect medium rare. I had some technical difficulties with my thermometer and I didn’t realize it until I was at 154 degrees. I think 145 would have been nice. Darrell I was able to maintain 250 plus or minus 10 degrees. I cooked it four hours which was a little too long. Seems like a lot of people don’t like the taste of lamb but we love it. Weighed 6 pounds.

Wouldn’t it have been better to debone it, retie it to be more symmetrical which would then make it cook more evenly? Pulling it off at 145 would be way too well done for me

No disrespect here but that's another piece of meat that looks like if you kicked it..it would start breathing. I'll pass. Enjoy.

Tried mutton (no choice) on a Navy ship in the late 40's, the swabs said they had lots of it because it would keep easier then beef ,,,,,,
Haven't eaten any other part of a sheep due to that eaten then.
