Currently in "the stall".
Put the brisket on at 0530 running at 260 the whole way on the WSM
Just checked internal temp for the first time 174.
It could be another 2 hours or another four, you never know.
Then I'll have to wrap it and let it rest for at least an hour.

Drizzled for 30min Hop saved my brisket which got pulled off the smoker at 192. Probe went in like hot knife through butter Now double wrapped and resting.
