Hey Brian, have you tried Burn Co. BBQ up in Tulsa? We don't have a lot of good bbq to begin with, but this place is great.

Blue Ridge Smokies Sauce


1 cup of Ketchup or Tomato paste/sauce
3/4 cup of either red wine vinegar or apple cider vinegar
1/2 cup of brown sugar
1/4 cup of either light or dark karo
1 1/2 teaspoons of Liquid Smoke
1/2 teaspoon of salt
1/4 rounded teaspoon of black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder


1. combine all of the ingredients in a pan and wisk until
smooth over high heat
2. Bring to a boil, then reduce heat and simmer uncovered
for 30 to 40 minutes or until sauce has thickened slightly


add ons
you can use cayenne pepper to bring the heat up
the apple cider vinegar is a little sweeter
you can also use molasses in instead of the karo if like the taste of molasses
we store it in the refrigerator for months at a time.


I fish on the edge and stay out of the middle

When I moved to Kingsville Texas in the late 70’s, I’d never seen so much BBQ cooked in my life at parties and get togethers. I also never saw bbq sauce either unless you went to a Resturant.

When I moved to Houston in 1990, I learned about bbq sauce. Head County is the best hands down. With that said, I rarely eat sauce with bbq, to much South Texas in me I guess.

When I use sauce it's Head Country, but hopefully the Q is good enough without it. My wife likes Sweet Baby Rays.

I only use sauce on the last hour of smoking my ribs and on chopped beef.
