Fished Fork from my kayak this a.m. First time I have fished there for catfish. Got 9 keepers on Danny King's PB. Stopped by The Minnow Bucket and saw they had Stubby's for $16.95 in what looked like it might be a quart bucket. Is there a cheaper place to buy it? I opened it up and saw that it looked more like a dough bait than a punch bait. So my question is, how do you bait this up? Do you form a ball over a treble with your hands?

Based upon my limited experience with Stubbys. I would NOT use it as a dough bait. I would imagine you need to stir it up a bit to make it more like what your looking for. Yes it is thick and that helps it stay on the hook longer.

OK, let me ask it again a little differently. Do you sink a treble deep into the tub with a stick and then pull it out at an angle to get Stubby's on the hook (like punch bait)? Or, do you have to form a ball of it on the hook with your fingers? Again, I have only peeked into a tub of it and it didn't look like a punch bait, and didn't have instructions on the tub, and it was $17 so I put it back on the shelf.

Either is fine. Handling it isn't a problem. Do a search on youtube, there's a good vid fully answering everything.

Much nicer and cleaner than punch baits. Doesn’t have the usual got awful stink so many people think you need for catfish either.

Stubby and littlewheel are right. Check out the videos and give Mr. Stubby a call too. He likes talking about fishing and will help you get going. And no, it's not a punch bait.
IMO it's easier and a bit more effective than the commercial punch baits I've tried. Being easier to use also means that I'm more likely to use it too. I'm not great at finding hungry cats. So, after a while soaking, I'll have to refresh the punch bait which means someone has to clear the wad of spent bait fibers--not an issue with Stubby's dough/cheese (whatever that secret sauce is) bait.

You use a treble hook with it. There are some tricks so you could use it with a J or circle hook. I'm not convinced it's worth the trouble.
Don't be shy about tuning it. All sorts of things can be used as thickeners or binders. I put enough flour in mine that it sets up like concrete when it's cold outside. Don't tell my wife, but I used her expensive stand-mixer to stir it up.
It does get dark when exposed to heat but that doesn't change what the cats think of it.
Keep it out of reach of the dog! My pup has broken into and eaten wads of the stuff, twice. The dog's fine, but my wallet took a hit replacing the bait.

We cast it when using slip corks. No trouble at all. I cast it when bank fishing , no trouble at all. You can’t sling it out there with a baitcaster, we use spinning reels. We really don’t have a need to cast fishing over our baited holes. However , we don’t have any trouble when we do cast. Just use a little finesse with a spinning reel and it will work better for you
