Whats the best way to cook a catfish? I am in search of the best catfish recipe West of the Mississippi and was wondering if you all could share some with me.

What a question!!! Do a search on recipe's. I marinate mine in mustard and LA hotsauce then roll them in Zantarain's corn flour. I'm doing a fish fry for a friend this afternoon for about 50 people and she wants the fish like that. It is kinda hard to do this method for a buch of people because you can't use a frying basket. The fish will stick to the basket.

I have two favorites. Both, you marinate fish for at least 4 hours in a mixture of eggs, vanilla soy milk, garlic salt and onion powder. Catfish are high enough in fat that you don't need to add too much extra.
Then, 1) bread the wet filets in pulverized, reduced-fat Club crackers (double dip for extra breading). Fry in Smart Balance cooking oil. This oil has a great buttery flavor and no trans-fat.
2) Bake non-breaded and breaded filets. On the non-breaded filets, place a slice of tomato and cover it with a slice of 2% reduced fat sharp cheddar cheese. The bigger the filet, the better the baked ones will taste.

How long do you bake them Don and what temp? Do you cover them?

Depends on the thickness.
The thick puppies....well, I boil 'em in salt/butter/water, then batter and fry 'em....or just smoke 'em.....YUMMY SMOKE!

fry in cornmeal with your choice of seasoning.

Mike, I bake thm at 350, uncovered for about 20-30 minutes, or until flakey.

Number 1 cook em at the lake or river always taste better.I put corn meal in a bag with salt and pepper and then add fish and shake and fry in cooking oil. I gave some fillets to a friend in south Louisana about 3 weeks ago and he (coonass) as he calls himself said his wife cook the fillets in tomato sauce with onions and peppers for about 5 minutes he called in tomatoe gravy. what ever.

FRIED,FRIED,FRIED: we use seasoned breadcrumbs and of course the DEEP FRYER

Fried, baked, or cooked out on the grill. Steam them or even boil when making fish soup.
When frying catfish roll them in seasoned flour, crushed crackers, corn meal, corn flour, bread crumbs, seasoned bread crums, panko bread crumbs, or whatever.
I will say I am hooked on dipping them in mustard and breading them with corn meal when I fry fish. I loved the flavor the mustard adds.
