UNDER-done? I order rare. I can't count the number of times I've sent rare-ordered steaks back because they're medium-well to over-well done.

At home a 1" Tbone gets 2 minutes on a side over the grill set on turbo. Better than the grill is hardwood coals in the fire pit. That's how to cook a steak.

There isn't a restaurant out there that can make a better steak than myself. I refuse to pay good money for something I can cook a whole lot better and for a whole lot cheaper.

Only time I go out for steak is to All you can eat Brazilian Steakhouse in Frisco called EG, fantastic place to sample a lot of cut of meats. I get all my cuts rare.

Tried the Texas de Brazil in Addison last time, Not as good and the ambience is no where like the EG in Frisco

My personal preference is Medium. Most places overcook their steaks for whatever reasons. If I Know that going in, I will order Medium Rare. To me though, GRADE is a lot more important. USDA Prime makes up only 3% of the steaks out there. Its hard to get USDA Prime from a Market. Most market steaks are CHOICE or SELECT.

It depends, when I go to Nick and Sam's, then it is usually the baseball cut done black and blue, this is the only place that actually does it right. If I get bone in or dry aged it is usually rare. You know the quote from the Cowboy Way; "Knock its horns off, wipe its A$$, and put it on the plate." that's me at a nice place. If it's a mediocore place, ie Saltgrass then it's med-rare because I know I'll need A1.

Yes!! There is about a 45 second to just over a minute window when grilling at high temps to get it this way, to the point where the blood don't run all over my plate Took me 4 or 5 tries with my new grill to get it perfect, but I found it.

We only go to a steakhouse about once or twice a year, for our anniversary and maybe a birthday. We always go to the Capital Grill in FW. I have never had an overcooked steak there and the service is fantastic.
