There are a lot of options for kayak PFD's. Find one that's comfortable to you and more importantly one that's comfortable when you're sitting in your seat. There are PFD's with high backs so it doesn't interfere with the back of your seat, ones with a thin back so it can be used with many different kayak seats and inflatable PFD's. Don't let cost get in the way of buying a good PFD that you'll wear. Here's a good variety to start with. https://www.austinkayak.com/subcategory/212001/Fishing-Recreational-Touring-Whitewater-PFDsMain thing is to not go out without wearing one that will keep you a float when you do flip.
You get out of it what you put into it!

I have been using the NRS Chinook also. Very comfortable. Floats me well also. Having the pockets is a nice extra.

I won't trust my life to an inflatable. Me neither!

I won't trust my life to an inflatable. Me neither! Me 3! Although my hubby says I'm so full of hot air I'd probably float without a PFD. j/k Seriously, OP find one you like and make sure it's comfortable while your seated and also casting.

NRS Chinook for me as well. Plenty of adjustment options to make it very comfortable.

I'm never in a kayak without mine. It's a Extrasport Osprey. It's become part of my fishing gear. I might even wear it if I were bank fishing. There's a pocket for my pliers, another one for my camera, some small ones for extra crappie jigs/treble hooks, sinkers, one for my whistle, and another for a J-frame equalizer

What is one that will fit a guy with a big stomach. I tried the ones mentioned but they kept riding up and were uncomfortable, reverted to the auto blow up version.
