Gonna build my own smoker and looking to gas assist the smoking and then finish with gas.
Ole Hickory, Oyler, Southern pride make models with this ability and was wondering if anybody sells the equipment to accomplish this?
Thanks, Matt

Gas ain't smoking, gas is grilling.

They sell burner tubes at Atwoods.
We are about to build a rotisserie smoker on a trailer that will cook 50 briskets at a time. The ability to have gas to start the wood is one thing weve talked about as well. Also, putting a wood rack in front of the firebox.

Gas ain't smoking, gas is grilling. Have to agree. lf gas is involved, it really isn't smoking. Pellet grill might be an exception but my jury is still on that too.

Are you about to start a new business? On a side note, when I went to the Jacksonville tomato festival, it sounded like east Texas had a bad growing season. How are your cucumbers doing?

Temp consistency is a must for quality Q.

I did both of my brinkman smokers.
got all my stuff at the hardware store, one thing to remember is run some pipe from firebox long enough to let the heat go down before the hose is attached. I put a brass valve on the side of firebox so I could adjust the flame and shut off easier than at the tank.
not hard to do, just have to take some precautions so you are not what gets smoked.

Noise talkers..... Smoke dont matter after 3 hours. OP you are somewhat correct that smoking is done in the first 1/3 of the cook at least for larger cuts like brisket. But it's the quality of smoke/flavor that's put into the meat in that first 1/3 that matters. I'm not much help on the burners but here's a site that provides some good information to make sure your smoker has good flow. http://www.feldoncentral.com/bbqcalculator.html

We are building it for our annual band bbq and well use it to smoke turkey legs at football games. Our growing season was horrible. Way too much rain. I actually just disced up the entire garden yesterday. Going to replant cucumbers and going to try my hand at pumpkins.

Roachie, Heres the design were going to base ours off of. Its an old style feed bin turned on its side with a firebox welded in. I think if we do burners, well either hang them from the doors or above where the wood will sit. Thought about just mounting two propane torches on the outside facing in toward the center where the wood will be to get it started quickly.
