Good video but would be much better without the wind noise. Needs to put microphone / smart phone inside thin foam cover.
Also, video shows a scale left on the hook point. That MUST be removed. Even a single scale will prevent hookup, especially on a circle hook. It will just slide right out of the fishies mouth and not hook up at all, - every time.

And if you have time, do a simple fillet, put in a zip lock bag....add plenty of salt to toughen up the meat bc mullet has a mushy texture. A smaller piece of meat and a circle hook will work just fine.

Not a fan of circle hooks, so I don't use or recommend them. J hooks provide greater opportunity for positive hook ups.
Circle hooks only have the advantage of increased survival rates for released fish due to not hooking them deeply.
If you plan to keep the fish, J hooks put more in the cooler.

I greatly prefer circle hooks. Cast. Put in rod holder. Wait till the drag starts ripping. Dont touch the rod till the drag starts ripping. We catch many many.
And almost need the circle hooks for sharks cuz if you set the hook immediately and hooked into the mouth their shark teeth are right on the line and will cut you off in no time.
Their teeth (reds and sharks) can fray your line no matter what but it would be like trying to cut a loose ribbon with scissors....much easier to cut when you have it tight.

Consider the bait that gets swallowed. Circle hooks are designed to slide out of the gut to prevent deep hooking.
Circle hooks that slide out of the gut may or may not end up hooking on the edge of the mouth as designed.
J hooks that do not slide out of the gut result in deep hooking which is a very effective way to put fish in the boat.
About half of our bull reds caught on J hooks are hooked deeply. Some of those fish may be caught on circle hooks. Some will not be.

why would you want to deeply or gut hook half your bullreds? you can only legally keep 1 per day (and 1 bonus tag) per valid fishing license holder.
