What is your go-to weekly dinner/supper meal. Looking for some idea's that will add a little variety to my palate.

I have an easy macaroni casserole dish I like. Preheat oven to 350 degrees F. Prepare macaroni & cheese according to box directions. Meantime, steam & quarter green beans. Spoon macaroni & cheese around edge of 8 inch pie plate. Mix cooked beans & mustard, then place them in center of macaroni. Arrange sausages on top of macaroni, then sprinkle with grated Parmesan cheese. Bake, uncovered, 15 minutes or until thoroughly heated.

Carne guisada Grilled chicken, zucchini, mushrooms, tomatoes, peppers, and onions. - Now you can go a bunch of different ways with this. Say the hell with it and throw it on a tortilla with refried beans and sour cream and it's tacos. Do a quick lemon/white wine / butter sauce and toss it with pasta and it's Italian. Serve it with hummus and naan and baba ganoush and it's Mediterranean. Even add some cilantro and lettuce and rice paper and fish sauce and it's Vietnamese. Variation on meatloaf stuffed with ham and cheese, wrapped in bacon, and painted with barbecue sauce. Italian sausage, peppers, and tomatoes with rigatoni.

My four favorite. Meatloaf and Mac cheese. Spaghetti and links. Tenderloin nachos Grilled tenderloin steak I also like pan fried potatoes with onions, bell peppers, and Polish sausage.

Nowdays.... wife buys marinated chicken breast, puts them in a Crock-Pot with onions and peppers. Shreds it all up and makes tacos.
She also bakes slices of eggplant covered in bread crumbs and we eat it with spaghetti sauce and grilled chicken.
The other day she got fried rice packages from Costco and she did chicken nuggets with orange sauce.
Life it fast with kids, her menus used to be awesome.

Hobo Dinner- hamburger patty, potato, carrots, onion and seasonings wrap in foil. Bake in oven on a cookie sheet. If the foil doesn't leak a fork is the only thing to wash.

Migas for Two
4 eggs 7 corn tortillas shredded cheese, Mexican blend is good fresh avocado (guacamole will work if no fresh avocadoes are available)
Options: minced garlic or garlic salt crushed red pepper fresh jalapeno, diced
Toss a very large pat of butter into skillet over medium high heat. Tear 3 corn tortillas into small pieces and toss into melted butter. Sauté until pieces of tortilla are slightly browned and just getting a little crispy. Lower heat to medium-low.
Beat eggs together. Pour over tortilla pieces, add shredded cheese. Stir and turn frequently until cooked. Plate the eggs and top with additional shredded cheese and sliced avocado or guacamole.
Serve with warm, buttered corn tortillas and hot black beans or refried beans. I sometimes add fresh pico de gallo or salsa to the beans, and top with shredded cheese.
You can add garlic salt or crushed red pepper to the scrambled egg mix. Or toss in some fresh diced jalapeno.
It’s a 15-minute meal.

We love spaghetti tacos! Wow that is a lot of carbs! You don't really feed it to that kid, do you?
