Low and slow choose a mild wood chip such as apple wood easy on the seasonings let the smoke do the flavoring once the fish flakes it is done don’t over do it

I would brine it first. Hi Mountain makes some good fish brines. Make sure to rinse it well after the brining and let that pellicle form before smoking it. Fruit woods work great for fish, as does alder.
