I’m heading to matagorda tomorrow and will be fishing until Sunday. I would like to bring some fish home for a big cook. What’s the best way to keep them fresh for a couple days in an ice chest?

if keeping them for more than 2 days, i'd either vacuum freeze em or freeze em in water. i'd be scared to leave em on ice that long.

Gut and gill them, Ice them down and add rock salt to the top of the ice. KEEP THE WATER DRAINED OFF!!!!!

Iced as is for two to two and a half days is no biggie. Nothing special to do or worry about.

After that have a plan to process further .

Gut and gill and pack in ice. You could also fillet and put in zip lock or vacuum seal and pack in ice for 2-3 days. If you fillet and bag, you could use rock salt with your ice as long as the bags are sealed good.
