fry fish cold or let warm up?

should the meat be cold or let set awhile before frying fish? have heard both ways

I fry mine out of the fridge, to the cornmeal, and then the cottonseed oil. I cut it into right sized pieces the night before and let it soak in salt water till I'm ready to fry.
Snowflakes and entitled brats will be the doom of America!

Room temp will keep your fryer oil from taking a dive...

Room temp will keep your fryer oil from taking a dive... I concur. I don't like egg washes. Bread them ahead of time and let them set.

Never thought about it. I use a thermometer in the oil to get it up to around 375 before putting the next batch in. Also strain out the corn meal between batches to keep it from burning.

You won't drop as much meal if you bread them ahead of time and give them a little shake before dropping them in.
